  • 1 rack of lamb, frenched

  • 1 cup panko bread crumbs (not seasoned)

  • 2 tbsp freshly grated Parmesan

Directions

  • Preheat oven to 425°F.
  • Generously season all sides of the lamb with salt and pepper. Adjust seasoning to taste.

  • Heat 1 tsp of olive oil in a skillet over medium-high heat. Sear each side of the lamb for 1-2 minutes. Once one side is seared, add butter to the pan and baste the lamb.
  • Transfer the lamb to the oven and bake for 10 minutes.
  • While the lamb is cooking, prepare the herb crust by combining all herb crust ingredients in a food processor. Blend until finely chopped.
  • Remove the lamb from the oven. Using a pastry brush, coat the lamb with Dijon mustard.
  • Press the herb crust mixture onto the lamb, ensuring an even coating.

  • Return the lamb to the oven and bake for another 8-10 minutes or until the internal temperature reaches 140°F. The lamb will continue to cook after removal, reaching 145°F for medium-rare.
  • Let the lamb rest for 10 minutes before slicing.
