Beef Pot Pie

Prep Time: 15 minutes; Cook Time: 55 minutes; Serves: 3-4 people

Ingredients

  • 2 lbs beef tenderloin, diced into 1-inch cubes
  • 1.5 cups onions, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1.5 cups potatoes, diced
  • ¼ cup flour
  • 3 cups beef broth
  • ¼ cup beef base
  • 2 tbsp salt
  • 2 tbsp pepper
  • 2 pre-made pie crusts
  • 2 tbsp oil
  • 1 cup red wine
  • 1 sprig rosemary
  • 1 tbsp thyme
  • 1 egg
  • 2 tbsp water

Directions

  • Preheat and Prepare the Bottom Crust
    • Preheat the oven to 350°F (175°C).
    • Place one pie crust into a pie dish, pressing it down gently and crimping the edges.
    • Bake the crust for 25 minutes, or until golden brown. Set aside to cool slightly.
  • Prepare the Filling
    • Cut the beef tenderloin into 1-inch cubes and season with salt and pepper.
    • Heat a pan on high heat. Once hot, add oil and swirl to coat the pan.
    • Add the beef cubes and sear on all sides until browned.
    • Add the diced onions and cook until translucent.
  • Build the Flavor
    • Pour in the red wine and reduce by half.
    • Stir in the diced potatoes and carrots, cooking for about 10 minutes.
    • Add the beef broth and beef base, then reduce the heat to low and simmer for 10 minutes.
  • Thicken the Filling

  • 3 tbsp kosher salt
  • 1.5 tbsp pepper
  • 2 tbsp oil
  • 4 cups water
  • ¼ cup beef base
  • Hoagie rolls
  • Provolone cheese slices

Directions

  1. Preheat Oven

    • Preheat your oven to 350°F (175°C).
  2. Prepare and Sear the Roast

    • Season the sirloin tip roast generously with kosher salt and pepper.
    • Heat a large pan on high heat. Add oil and swirl to coat the pan.
    • Sear the roast on all sides for 2-3 minutes per side until a golden crust forms.
  3. Roast the Beef

    • In an oven-safe pot or Dutch oven, layer the bottom with sliced onions, chopped celery, carrots, garlic, rosemary, and thyme.
    • Place the seared roast on top of the vegetables.
    • Transfer the pot to the preheated oven and roast for 1 hour and 15 minutes or until the internal temperature reaches 120°F (medium-rare).
  4. Rest the Roast

    • Remove the pot from the oven and let the roast rest for at least 30 minutes to retain its juices.
  5. Prepare the Au Jus
