Prep Time: 15 minutes; Cook Time: 45 minutes; Serves: 4-6 people

Ingredients

  • 3 lbs Corned Beef Marinated Brisket
  • 10 small red and Yukon gold potatoes
  • 5 medium tri-colored carrots
  • ½ head green cabbage, ½ head red cabbage
  • 3 garlic cloves
  • 2 bay leaves
  • ½ medium onion
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 8 cups water

Directions

  • Prepare and Season the Water
    • In an 8-10 quart stockpot, bring 8 cups of water to a boil.
    • Once boiling, add the marinated brisket along with its liquid marinade.
    • Stir in salt, pepper, garlic, and bay leaves.
    • Cut the onion in half and add it to the pot.
    • Cover and cook on medium heat until the brisket is fork-tender, approximately 2 hours.
  • Prepare the Vegetables
    • Rinse and wash the potatoes and carrots thoroughly.
    • Cut the potatoes in half.
    • Slice the carrots at a 45-degree angle into 2-inch pieces.
    • Cut both the red and green cabbage into 1½-inch wedges.

  • Add Carrots & Potatoes
    • Once the corned beef is fork-tender after 2 hours, add the carrots and potatoes to the pot.
    • Cook for 10-15 minutes or until fork-tender.
  • Add Cabbage
    • Add the red and green cabbage wedges to the pot.
    • Cook for an additional 10 minutes.
  • Plate Presentation
    • Remove the brisket from the pot and let it rest for a few minutes before slicing.
    • Arrange the corned beef slices on a platter, surrounded by the cooked potatoes, carrots, and cabbage.
    • Drizzle some of the flavorful broth over the top for extra moisture and serve warm.
