- 10 lb prime rib loin
- 2 tbsp black pepper
- 1/4 cup chopped garlic
- 2 tbsp liquid smoke
- 1/4 cup sugar
- 1/2 cup soy sauce
- 1/4 cup kosher salt

Prepare the Seasoning Mix:
- Preheat your oven to 450°F.
- In a medium bowl, mix salt, pepper, chopped garlic, liquid smoke, sugar, soy sauce, and kosher salt until a paste forms.

Prepare the Prime Rib Loin:
- Pat the prime rib loin dry with a paper towel to remove any excess moisture.
- Rub the seasoning mix all over the loin, ensuring you cover every nook and cranny.

Initial Sear:
- Place the seasoned loin on a sheet tray or roasting pan and insert it into the preheated oven.
- Roast for 15-25 minutes to achieve a nice sear on the outside without burning.

Rest the Meat:
- Once desired color is achieved, remove the loin from the oven and let it rest for 20 minutes. This step allows the juices to redistribute within the meat.

Slow Roast:
- Reduce the oven temperature to 225°F.
- Return the loin to the oven. Cook for approximately 20-30 minutes per pound, depending on your oven, to reach the desired doneness.

Temperature Guide:
- For rare: Pull at 100-105°F for a final temperature of 120°F.
- For medium-rare: Pull at 115-120°F for a final temperature of 130-135°F.
- For medium: Pull at 125-130°F for a final temperature of 140°F.
- For medium-well: Pull at 135-140°F for a final temperature of 150-155°F.
Tip: The prime rib will continue to cook slightly after it’s removed from the oven, so monitor closely to avoid overcooking.
